  • Soup of snails

    Ingredients:
    2 kg. snails 70 g. Rice 20 g. Tomato juice 1 bunch green onions 1 onion 1 red bell pepper 1 tsp flour 100 ml. cooking oil 1 sprig fresh garlic 1 bunch parsley 0.5 tsp hot red pepper 2 allspice berries 1 tsp pepper 1 tsp oregano 1 tsp Lovage 1 tsp mint

    Method of preparation:
    Snails leave to stand for 1-2 days in a container with holes (best in plastic bidonche mineral water, punctured in several places).
    They may cast a handful of flour.
    This avoids bitterness in cooking.
    Wash thoroughly under running water without added salt.
    In a large pot boil water and put the washed snails.
    Then boil water, fire is reduced and antifoaming begins with a slotted spoon.
    Then there was added 100 ml. oil, chopped onion, green onion, pepper cut into thin strips and spices - dried or fresh mint, lovage, marjoram, ground black pepper, allspice, cayenne pepper - optional.
    Salt to taste the broth and boil for about 1 hour and 30 minutes on low heat.
    At the end of cooking add tomato juice and the washed rice.
    After boiling rice soup thickened with fuzzy 1 tsp flour and 1 tsp red pepper with a little water.
    Add finely chopped parsley and fresh garlic.
