  • Lentils soup

    Lentils soup

    Soak the lentils in advance for 5 – 6 hours, then wash them several times with water. Put the lentils in a saucepot with the chopped onions, carrots, peppers, tomatoes, oil, the garlic heads and salt. When the soup is almost ready, season with a little bit of savoury. It can be consumed with a little bit of vinegar.

    Lentils cream soup

    Put the lentils in a litre and a half of water together with the finely chopped onions and carrots and the oil. After 20 – 25 minutes, when it is boiled, season the soup with salt, add coriander, add the yogurt, the lemon juice and its grated peel. Blend the soup.

    Potato cream soup with croutons

    Peel the potatoes, cover them with water and boil them. Then mash them with a blender, stir in the hot milk, add ¼ of the butter, salt and boil the soup for 5 minutes. Then remove from the heat, add the black pepper and the yolks. Serve the soup sprinkled with the fried in the rest of the butter bread cubes.

  • Cream soup with cauliflower and cheese

    Cream soup with cauliflower and cheese

    Break the cauliflower into florets and boil it in salted water for 15 minutes. Melt the butter in a frying pan and fry the flour. Add the roux to the soup, pour the milk in too and leave it to boil for 2 – 3 minutes.     Chicken gizzards soup

    Boil the gizzards in salted water until soft. Stew the finely chopped onions and carrots in a splash of oil. Add the potatoes and fry lightly. Pour over them the strained stock. Cut the gizzards into small pieces and add to the soup. When the potatoes soften, add the vermicelli, leave them to boil for 5 – 6 minutes and remove from the heat.     Tarator (Cold soup with yogurt and cucumbers)

    Chop the cucumbers into small cubes or grate them. Blend the garlic with some salt, finely chop the dill. Mix all together with the yogurt blended together with some water. Season the tarator to taste with salt and oil. Sprinkle with the crushed walnuts.

    Cut the potatoes into cubes, add the carrots, chopped into thin pieces and the finely chopped onions. Pour over 2 tbsp of hot salted water and boil over low heat.   • Tomato soup with vermicelli

    Tomato soup with vermicelli

    Stew the onions and garlic in butter and some water. When they soften, add a pinch of salt, paprika and finely chopped tomatoes. Stir the soup and add hot water. When the water comes to a boil, add the vermicelli, the black pepper, a pinch of basil and boil for around 15 more minutes over low heat. The soup can be consumed with sprinkled parsley and with croutons.
