Rum Creme Brulee


  • Flavored Creme Brulee with rum

    Time preparation: 10 minutes

    Processing time: 40 minutes

    Serves: 4


    Ingredients:
    5 ml.rum 0,5 teaspoon vanilla extract 240 ml. cream 3 yolks 2 tbsp sugar 2 teaspoons brown or white sugar

    Method of preparation:
    Preheat the oven to 150 C.Beat the egg yolks with the sugar and vanilla extract until creamy.
    Heat the cream to near boiling. Gradually add the rum, stir and carefully added to the beaten yolks, stirring constantly.Pour the mixture into four 125ml. ramekins.Place them in a deep pot and pour hot water halfway up ramekins.This will allow the creme to evenly baked.The water should not boil, it should barely simmer.Bake the creme for 25 to 30 minutes, or until set around the edges but still loose in the center; the center will jiggle a little when shaken.Take out the creme from the water bath and refrigerate for 2-3 hours.Sprinkle with sugar and grill bake for 3min. or quickly caramelize using a small culinary torch or creme brulee iron.

Boil the cream for another 5-6 minutes, stir and pour into custard cups or glasses. Decorate with whipped to a foam egg whites with sugar and fruits of choice (apricots, apples, currants and cherries).
